Verilyn’s Halloween Walnut Carmels

I lost a very dear friend several years back. Although I think of her often, this time of year I remember her yearly making of Carmels. She would always make 2 batches 1 for her husband and 1 batch for her and I. It was always a surprise when she did it. She would show up at work and say she had a surprise. I would be handed a little packet wrapped in foil. I know a big smile crossed my face, and she would always tell me don’t worry there’s more, I made a batch just for you and I! We would eat carmels for a week. It was truly the best! She gave me the recipe the year before she died. I have decided this will be the first year I give my hand at it. I wanted to share with the rest of you as well. And I know a few of you will be handed a small packet wrapped in foil. I hope you will enjoy as much as I have.

Ingredients

  • 1 C butter
  • 2 1/4 C Packed Brown Sugar
  • 1 C Light corn syrup
  • 2 C light whipping cream
  • 1/2 C chopped walnuts

Preparation

  1. Butter sides of heavy 5 qt pan.
  2. Melt butter
  3. Add brown sugar and a dash of salt
  4. stir until combined then stir in corn syrup
  5. Gradually add cream, stirring constantly
  6. Cook and stir over med heat until candy reaches firm ball stage or candy thermometer reaches 245 degrees)
  7. Remove from heat
  8. Place walnuts in bottom of buttered 9 × 9 × 2 pan
  9. Pour carmel over nuts
  10. cool, enjoy and share with a friend!!!

Trust me when I say, you are on my list to get a small wrapped foil packet! I may be a bit misty eyed when I give it to you but I know you will understand!
